There's something really calming and therapeutic when I make my lunch for tomorrow. I pack my lunch 4 times a week, and I never go somewhere and pay for my lunch. I always take my own. It gives me control, which I like. I make good food for myself too, so I don't have to settle for the fast food products that aren't the best. The best thing I love is a sandwich of toast with red bell pepper hummus and sliced mushrooms. Another thing I enjoy is cottage cheese with mulberries.

I don't make really complicated stuff. I just make good stuff. I like taking the time usually at 8 or 9 the night before, and just cutting my veggies or toasting my bread. It makes me want to try making the more intricate bento boxes like they do in Japan.

When I'm making lunch, the counter doesn't look this neat. I have stuff strewn out all over.

Was this your counter? No ? It looks so goooood and what you say sounds super. I'll make sure I'll pack good lunches now that I won't work from home . Do you most often make sandwiches? What do you put on them beside veg?

*laughs* Oh no, this isn't my counter. When I make lunch, I pretty much empty the fridge and put out the foods in front of me, so I can see what all I have. It's pretty cluttered and messy!

I don't make sandwiches too often! Usually I take little tupperwares full of salads, beans, and rice. When I do make a sandwich, everything is a possibility! It depends on what produce I have at the time. I love hummus on sandwiches, and other times I put tofu, tofu burgers, mushrooms (especially portabello mushroom caps -- yum!), or just vegetables.

So.... to answer your question, I don't put anything on them that's not vegetables! I sometimes crave peanut butter and jelly, but we have no grape jelly so that never works out.

Me, healthful? *dies laughing* For dinner I had cheese ravioli and flaky layer biscuits. Not healthy. But I went to the gym and jogged and ellipticaled, so I think I burned dinner off and then some. <3 I've been struggling with my eating and dieting lately, and I hope to be back on track soon. No-- I WILL be on track soon, and by soon I mean as of now. :D

Awww bento boxes are truly awesome! I also never ever ever eat outside for years now, no matter how weird it makes me seem. I don't feel comfortable unless I have complete control of both quality and quantity of my food, so I totally see your point! :D

Exactly! I know exactly what I put in my food and how much. And also, going out to eat every lunch would make me nervous. I can't control how they make the food. What if they use a soggy tomato? Or if the bread they use is a bit fuzzy with mold... there's no control. :D You totally get me!

I was just thinking that before I read your text, lol. I was impressed at how everything's laid out. When I prepare anything, there's a sort of "contained explosion" that occurs & with baking a fine layer of flour coating all around. I clean after, but the during is always messy. :X
